Macaroni Menus
Lasagna Roll Ups
What you need:
-Lasagna noodles
-Shredded parmesan
-Ricotta Cheese
-Spaghetti Sauce
-Cupcake baking pans
Cook your lasagna noodles by following the instructions on the box. Once the noodles are finished, lay flat on a cutting board and begin layering all ingredients. Spread ricotta first, next add shredded parm and finally add the sauce. (Judging by the photo it looks as though I only chose to put my sauce half way, but I didn’t. It was all the way across).
I chose to use the ingredients listed above because that is what I had on hand. You could easily substitute the cheeses or add in veggies. Spinach and mushrooms are amongst my favs.
I prepared three at a time because that is all that would fit on my prep space. Once my ingredients were all layered I began to roll them up. This part was a little messy, but there was no way around it. I then placed them upright into my cupcake pan.
I baked them on 350 just until the cheese I placed on top was melted and a little brown- approximately 15-20 minutes.
Everything is pre-cooked so you just want the cheese to melt and flavors to blend. Tada!! Lasagna Roll-ups!!
